1 tsp Cinnamon
40g Brown Sugar

100g Irish Butter, softened
125ml Irish Milk
1 Irish Egg

Pre-heat the oven to 180°C /Gas Mark 4. Peel
and chop the
apples into small, bite-sized pieces. In a
large mixing bowl,
add the self raising flour, oats, baking powd
er, cinnamon and
brown sugar and mix together. Add the
apple pieces and stir.
In another bowl, lightly whisk the egg and
butter together,
then add the milk. Gently mix into the dry
ingredients, then dollop into each muffi
n
case and bake for 20-25 minutes until risen
and golden brown on top. Set aside to
cool, then serve.

350g Baby New Potatoes

1 Yellow Pepper
1 Red Pepper
1 Courgette
2 Garlic Cloves
60ml Olive Oil
1 tbsp Red Pesto
4 Medium Irish Eggs
4 Bagels
Sea Salt and Black Pepper

Boil the potatoes in some salted water for 15 minutes until tender
and drain well. In the meantime, cut the peppers into medium
chunks, discarding any seeds and white pith. Chop the courgette
and red onion into small chunks. Peel and mince the garlic.
Heat the oil in a large frying pan, add the peppers, courgette,
onion and garlic and fry for 10 minutes on a medium heat, stirring
as you cook. Add the potatoes and pesto to the pan, stir well and
cook for another 5 minutes. With a spoon, make 4 spaces in the
mixture and crack an egg into each, cover with a lid or some foil
and cook for 5-6 minutes until the eggs are just set. Sprinkle over
the chilli flakes, some black pepper and scatter over some basil
leaves. Serve immediately alongside toasted bagels.
