Add the grated zest of the lemon, rapeseed oil, roughly bashed garlic cloves and freshly chopped thyme and sage to a bowl. Separate 90% of the skin from the chicken and fill with the garlic mixture. Place chopped carrots, parsnips and turnips into a large roasting dish and top with the chicken. Spread remaining garlic mixture over the chicken, then rub with butter. Place half a lemon and rosemary sprigs inside the chicken. Sprinkle onions around the vegetables and cover the chicken with foil. Cook for 3 hours. After 3 hours, remove the foil from the chicken and continue cooking for a further hour or until the chicken is cooked. For the last 30 minutes of cooking the chicken, increase the oven to 220°C/Gas Mark 7 and roast for 25-30 minutes until the skin is crisp. Place the potatoes into a large pot and cover with cold water. Bring to the boil and simmer for 10-15 minutes, then drain the water. Place 2 tsp of rapeseed oil in an ovenproof dish and add in potatoes. Sprinkle 1 tsp of oil on top and put in oven for 30-45 minutes. Season with salt and pepper.
