Croissant French Toast with Strawberries & Maple Syrup
Ingredients (Serves 4)
4 Simply Better French All Butter
Croissants, baked
3 Simply Better Free Range
Corn Fed Large Eggs
1 Tsp Simply Better Organic
Cinnamon, plus extra for dusting
50ml Simply Better Organic
Grade A Canadian Maple Syrup
100ml Simply Better Organic
Irish Jersey Milk
100g Fresh Strawberries
100ml Double Cream
1 Tbsp Sugar
1 Tbsp Vanilla Extract
½ Tsp Salt
20g Butter
Method
1. Lightly grease a 9 x 13 inch-baking dish with butter.
2. In a large bowl, whisk together eggs, milk, cream, sugar, vanilla,
cinnamon, lemon zest and salt.
3. Halve the baked croissants horizontally (like a sandwich).
Arrange the bottom slices in the base of your dish and scatter
over the strawberries.
4. Pour over half of the egg mixture. Drizzle with half of the maple
syrup.
5. Add the remaining croissants over the top and pour remaining
egg mixture over the croissants. Cover and place in the fridge
for 30 minutes or overnight.
6. When ready to bake, remove baking dish from the refrigerator
and let stand for at least 30 minutes before dusting with
cinnamon.
7. Preheat oven to 180°C (350°F / Gas Mark 4).
8. Transfer to the oven and bake for 45 minutes or until croissants
are golden. If the tops of the croissants begin to brown too
quickly, cover the dish loosely with foil.
9. Remove from the oven and serve straight to the table with
some maple syrup, natural yogurt and fresh berries.
