175g plain flour
½ tsp baking powder
½ tsp bicarbonate of soda
100g cocoa powder
200g caster sugar
200g unsalted butter
3 free range eggs
200ml buttermilk
pinch of salt

100g cream cheese
100g unsalted butter,
softened
75g icing sugar
100g dark chocolate,
melted

Preheat oven to
180°C/350°f/gas mark 4.
Sift the flour, baking powder,
bicarbonate of soda and
cocoa powder into the bowl
of a stand-alone mixer or in
a large bowl with a handheld
mixer, add the remaining
cupcake ingredients and
mix to form a smooth batter,
taking care not to overmix.
Divide between the cupcake
cases and place in the oven to
bake for 15 minutes until risen
and cooked through. Remove
from the oven and allow to
cool for 5-10 minutes before
removing from the tray, place
on a cooling rack to cool
completely.
