Step Heat the olive oil in a frying pan. Step Add the scallops and prawn mix to the pan flat side down and cook until the scallops turn golden brown and the prawns take on a beautifully deep pink colour, this will take 2-3 minutes. Don’t move the scallops around in the pan as this will prevent them from cooking. Step Add the butter, lemon juice and zest and garlic and cook for 1-2 minutes, making sure to baste the scallops and prawns during this step.
