Ingredients
•
1 Pack Deluxe arinated
King Prawns
•
2 Tbsp Olive Oil
•
1 Tbsp Butter
•
1 Lemon (Juice And Zest)
•
2 Garlic Cloves, Crushed
•
1 Handful Fresh Parsley
Finely Chopped
•
Salt and Pepper
Step
Pat dry scallops and prawn
mix with kitchen paper and
season well with salt and
pepper.
Step
Heat the olive oil in a
frying pan.
Step
Add the scallops and
prawn mix to the pan flat
side down and cook until
the scallops turn golden
brown and the prawns take
on a beautifully deep pink
colour, this will take 2-3
minutes. Don’t move the
scallops around in the pan
as this will prevent them
from cooking.
Step
Add the butter, lemon
juice and zest and garlic
and cook for 1-2 minutes,
making sure to baste
the scallops and prawns
during this step.
Step
To serve scatter with the
fresh herbs and serve with
crusty fresh bread to mop
up all the delicious zesty
oil.
