How To Cook Our Rosemary
& Garlic Crumb Lamb Rack:
1. Heat the oven to 190°C/gas mark 5
2. Place a large frying pan over a high heat and place
the lamb rack seasoned - side down until golden brown
3. Quickly sear the other side for 1 minute
4. Transfer to the oven on a wire rack over a baking tray
5. Cook for 8 minutes
6. Pierce with a metal skewer close to the bone -
it should be warm to the touch when removed
7. If it isn't cooked, return to the oven until cooked
8. Remove from the oven, cover with foil
and rest for at least 5 minutes
