Kid's Corner Easter Blondies Serves: 9 | Prep: 15 mins | 3zke: 25 mins Ingredients: 200g butter, melted 150g light brown sugar 100g caster sugar 2 eggs 1 tsp vanilla essence 250g self-raising flour, sieved ½ tsp baking powder, sieved 1 tsp salt 100g white chocolate chips 80g pecan nuts, roughly chopped (optional) 150g Mini Eggs, to decorate 100g leftover Easter egg chocolate, white or milk Sarah Butler SuperValu SELF RAISING FLOUR €2.55 SuperValu Self Raising Flour 2kg - €1.28/kg 5 Simple Steps 1 Preheat oven to 200°C. Line the baking tray with parchment paper, then whisk the melted butter with the two sugars using an electric mixer for three minutes. 2 Beat in the eggs and vanilla essence, and once combined, set aside. 3 In another bowl, sieve the flour and baking powder and add the salt. Add the flour mixture to the butter and sugar and combine, then fold in the chocolate chips and pecan nuts. 4 Pour the mixture into the prepared lin and bake for 20-25 minutes until golden brown. Allow to cool in the tray before removing. 5 Cool in the fridge before cutting into squares, then melt the white chocolate and drizzle it over the top. Sprinkle with Mini Eggs to finish. 22
