Kevin's Seasonal Suppers
Slow Cooker Cheesy Beef
and Potato Gratin
Serves: 4 Prep: 10 mins | Cook: 3-4 hours
Ingredients:
1 tbsp oil
750g SuperValu Irish Beef Mince
1-2 tbsp Worcestershire sauce
3 tbsp red pesto
2 tsp dried herbs
½ tsp ground cinnamon
1kg rooster potatoes, sliced thinly
2 onions, sliced
3 carrots, diced
4 garlic cloves, chopped
Salt and pepper
150g cheddar cheese, grated
75g parmesan, grated
150ml beef stock, warm
Method:
1. Heat a large pan over high heat with a
little oil and add in the meat. Sear for
3-5 minutes until coloured. Season
with Worcestershire sauce, red.
pesto, cinnamon, dried herbs, salt
and pepper. Remove from the heat.
2. Line a slow cooker bowl with about a
third of the potatoes. Add half of the
onions, carrots and garlic.
3. Cover with half of the caramelised
minced beef and half of the grated
cheddar cheese.
4. Repeat the layering process with the
second third of potatoes and the rest of the
onions, beef and cheese.
5. Cover with the last third of the sliced potatoes
and sprinkle with the parmesan and extra dried
herb if desired.
6. Drizzle the beef stock over and cover with the
lid.
7. Cook on high for 3-4 hours until the
potatoes and beef are fully cooked.
8. Serve and enjoy!
