Chef Kevin Dundon shares two
restaurant-quality recipes for you
to enjoy at home this autumn,
using our award-winning SuperValu
Signature Tastes range.
Ingredients:
2 tbsp peppercorns, crushed
4 Signature Tastes Irish Hereford Fillet Steak
1 tbsp olive oil
50g butter
2 shallots, finely chopped
2 garlic cloves, chopped
2 sprigs thyme
2 tbsp brandy
100ml beef stock
Seared Fillet of Beef with
Brandy Peppercorn Sauce
Serves: 4 | Prep: 10 mins | Cook: 15 mins
1 tsp Worcestershire sauce
1 tsp Dijon mustard, optional
100ml cream
Sea salt
1 pack Signature Tastes Buttery Mashed Potatoes
Method:
1. Place the peppercorns in a pestle and mortar
and crush until coarse. Set aside.
2. Preheat a sauté pan over medium-high heat until
very hot. Drizzle the oil over the steaks and rub
to coat well.
3. Place the steaks on the pan. Season well and
sear for 2-3 minutes on each side over high heat,
reduce the heat to medium and add the butter.
4. Continue to cook, basting in the butter for a
further 2-3 minutes for medium or 4-5 minutes
for well done.
5. Once ready, remove the steaks from the pan
and, over medium heat, add the shallot, garlic,
thyme and peppercorns.
6. Reduce the heat to medium/low, add the
peppercorns and garlic, and cook for 30
seconds. Pour in the brandy and flambée, then
add the stock and mustard and simmer for 2
minutes to reduce and concentrate the flavours.
7. Add the cream and bring it back to a simmer for
a further minute or so. Remove from the heat
and add the rested fillet of beef back into the
sauce to serve.
8. Serve immediately with some creamy mashed
potatoes.
