Kitchen Hacks
This quick and easy recipe
is nutritious and an ideal
lunchbox filler. I like to do
this on a Sunday when I
need to use up leftovers!
Pop them into an airtight
container and use
through-out the week.
Ingredients:
6 eggs
3 tbsp milk
½ tsp parsley, chopped
1/4 tsp salt
65g chopped cooked ham
130g red cheddar
Salt & freshly ground pepper
Finely chopped tomato, spring
onions, or peppers (optional)

Method:
1. Preheat oven to
200°C/180°C fan/Gas 6
2. Brush a bun tin with
sunflower oil.
3. Prepare the fillings: Chop
the ham into small pieces,
grate the cheese and slice
the peppers, tomatoes, and
spring onions.
4. In a medium bowl add the
eggs and milk and whisk
well, then add the chopped
parsley, salt and pepper.
5. Add the cheese, ham,
and other vegetables and
combine, then spoon
into the prepared tin and
sprinkle a little cheese on
top.
6. Bake for 15-18 minutes until
they spring back to the
touch and allow to cool
in the muffin tin before
carefully removing.

FREEZE: Vegetables
such as onions, leeks,
carrots, broccoli,
cauliflower, spinach
and kale all freeze well. Simply
wash, chop and then freeze in a
zip lock bag. Chili, Garlic, Ginger
and fresh herbs also freeze well
and are a handy addition to
dishes that only require a small
amount.
